Gather whole mesquite pods from the tree, not the ground. Clean any leaves or twigs from the pods. Spread them on a sheet tray or roasting pan. Roast them in the oven, about 300 degrees, for 30-45 minutes, until they are dark brown and very fragrant. Cool, then break the pods into very small pieces with a kitchen mallet or something similar! Then grind them with a coffee grinder and brew them as you would regular ground coffee. Serve hot or chill for iced coffee. No caffeine, just sweet taste from the pods.
